Quick and Easy Vegetable Soup Recipe
This week I was hit with a cold. So I didn't take many pictures and didn't do much besides go to work and then come home and take NyQuil and go to sleep. However, Tuesday when I called in sick to work I made some soup. I thought I'd share this quick and easy recipe.
I didn't want to stand up and chop a bunch of vegetables so I took different canned items from my pantry and tossed it together and it turned out pretty good. It was one of the meals I could stomach because it is such a light meal.
Ingredients:
1 quart of home-made broth
About 5 quarts of water (or however much you want for the broth, I didn't measure an exact amount)
1/4-1/2 large onion, chopped
1 can carrots
1 can green beans
1 can corn
2 Tablespoons of Better Than Bouillon Vegetable Base
1 drop Basil Vitality Oil
1 drop Carrot Seed Vitality Oil
1 drop Black Pepper Vitality Oil
Salt (I just grinded some in and didn't measure an exact amount)
Directions:
Boil the home-made broth and water
While water is boiling chop onion
Put chopped onion, Vitality Oils, and Better Than Bouillon Vegetable Base, and some salt in boiling water
Let simmer for 5 minutes
Taste broth, add salt or Better Than Bouillon Vegetable Base to taste
Add canned vegetables
Simmer until vegetables are soft
Serve with bread rolls.
